New Food

Here's a couple of dishes I've been really into lately.

When Matt and I were flying home from Massachusetts, we ordered this Asain wrap and it was delicious and so I had to attempt to make it when I got home.

Turkey
Carrot Slices
Red Cabbage Slices
Whole Wheat Wrap
Toasted Asian Sesame Salad Dressing

Butternut Squash + Mango =Puree them together.
1 Mango + 1 Banana = Cut fruit into chunks and place in soup.
I love this, Matt thinks it's ok, and many people say it sounds weird! Try it for yourself :)
You can eat it hot or cold. I prefer warm :)


Fall Crafts


Fall is in the air!
My favorite season is finally here and what better way to enjoy it than crafts? So today I went over to one of my favorite stores in town, Porter's, and picked up some things. I had a lot of fun sprucing up our apartment and was really excited for Matt to come home and see what I'd done! Since we are college students n' all, I was on a budget so I could only do a couple of little projects, but it was fun all the same!

A Clip From the Bike Ride

26 Miles of FUN!



About a month and a half ago Matt and I decided to rent a tandem bike from the school and take a nice loooooong ride. There is a small mountain that is close by to Rexburg that we have been wanting to hike called R Mountain. We were feeling ambitious and decided to ride the 13. something miles there, hike up the mountain, and then ride the 13. something miles back.
We had SO much fun!
The scenery was gorgeous and we hope to do it again sometime!

Last Days with the Constantines


We've created many great memories with the Constantines while we have been here at school. We met them while we were engaged, winter of 2010. This week they are moving to Minnesota and MAN are we going to miss them!

SOME of Matt's Art From This Semester

Matt has spent hours and hours on art this semester and here are some of his pieces. I am so so proud of my super talented husband. It has been fun watching him progress and hone in on his technique. The Trophy Shop piece is so fun and he was really able to show his style in it.
All of the other videos are from his Digital Illustration class that used a program called Maya. He definitely had a love/ hate relationship with Maya, but he put a lot of effort into it and I think he produced some terrific pieces!

5k Hurdle for Hope



This past Saturday we ran our first 5k with our cousins Jesse and Jessica. Fun doesn't even describe the experience! It was a 5k full of obstacles:
Ray's Chevron Mud Run
Fire Leap
Case Tractor Wall
Jamba Straw Crawl
Tire Factory Tire Field
BMC West Hurdles
Weight Vest River Run
I guess we wanted to go all out for our first 5k and man was it fun. We ran the whole thing! The first obstacle was the tire field and that about killed us all! It was 1/4 mile. INSANE.
We finished together strong with 14 minute miles which was pretty good for the amount of obstacles we had and we had to stand in line for a few of the obstacles! Matt and I came in 88 out of 202. Well one of us came in either 87,88, or 89. My tracker came off in the water! All I know is we crossed together haha! :)

Jessica took a pretty nice fall in the mud pit. If you think her ear is bad, you should have seen the amount that went into her mouth! She's a trooper. :)

This was Matt's shoe post-race. Most of ours looked like this except Jesse's had a little something extra, an EARWIG!
It was nice to relax in the warm sun afterwards.
YAY! We did it! We completed our first 5k together! We loved it and we are already signed up for our next one this September. It will be just as WILD and CRAZY as this one was, except it is on the cleaner side. 5k FOAM FEST here we come!
